    Asparagus Stir-Fry

    This saucy Asparagus Stir-Fry is seasoned with things I love...lots of garlic! Plus oyster sauce, soy sauce, and sesame oil. It's a quick and simple stir-fry, a very onolicious way to enjoy fresh asparagus. Best with rice ^_^

    We bought a big bag of asparagus from Costco Hawaii the other day. Dad used the stems to make crab and asparagus soup (a popular Vietnamese dish, I'll ask him for the recipe one day).

    And then we were left lots of beautiful, tender asparagus tips. There are so many dishes you can make with the tips but in the end I decided on a simple stir fry. Fast, easy, tasty! And good with rice. What more can you ask for? ^_^

    Ingredients

    Ingredients for Asparagus Stir-Fry.

    Here's what you'll need:

    • Asparagus
    • Garlic, minced
    • Oyster sauce
    • Soy sauce
    • Sesame oil
    • White pepper (optional but tasty)

    Instructions

    Asparagus Stir-Fry.

    Let's get cooking!

    Prepare the sauce. Mix the oyster sauce, soy sauce, sesame oil, white pepper (if using), and ½ cup of water in a small bowl. Set aside.

    Wash and trim the asparagus. Cut into 1 ½ -inch long pieces on the diagonal.

    In a large pan over medium-high heat, add some cooking oil (I like to use avocado oil, or any neutral oil). Then add the asparagus and stir-fry for 2 minutes.

    Then add the minced garlic and cook for another 1 minute.

    Add the sauce and turn the heat down to medium-low. Stir to mix and cook for 1-2 more minutes until the asparagus is nice and tender.

    Remove from heat, spoon into a bowl. It is ready to eat! Best with rice ^_^

    FAQ / Tips

    Add protein!

    To make this more than "just" a vegetable dish, I sometimes add shrimp. Add the cleaned and peeled shrimp right before you add the sauce (Step 5).

    You can also add ground pork. For ground pork, I brown the pork before adding the asparagus to the pan.

    Both ways are so good!

    How long do leftovers keep?

    This dish (like all stir fries) are best fresh! Leftovers will keep in the fridge 2-3 days in a sealed container. You can reheat in the microwave but I think it tastes better if you reheat over medium heat on the stove.

    What to eat with this?

    Ideally: rice, plus a clear soup (like Wonton Soup) and a meat dish (think Steamed Ginger Chicken). Or you can replace the rice and meat dish with a fried rice type dish like Dried Scallop and Egg White Fried Rice.
