    Squash and Shrimp

    A simple and saucy stir fry! Make this with just 4 ingredients and in 20 minutes. Shrimp and fresh opo squash (you can also use zucchini) is seasoned with garlic and fish sauce. Super tasty with a big bowl of rice ^_^

    A family friend recently gave us some squash her mom grew! She didn't know the name of the squash...and neither did I haha.

    After some online searching, I'm pretty sure this is opo squash! Opo squash (also called long melon) is pretty popular in Hawaii, but this is my first time cooking with it ^_^

    Here's what you'll need:

    • Opo squash (you can also subsutite zucchini)
    • Shrimp, peeled and deveined
    • Garlic
    • Fish sauce

    Here's a better look at the squash. I started peeling the skin off the left one before I remember to take a photo. They're long, beautiful, and green. You'll want to peel the skin before cooking with it.

    Opo squash falls into the category of summer squash. So does zucchini, which you can also use for this recipe.

    Opo squash is pretty mild in flavor. It's great at absorbing up any flavors you add...and we LOVE garlic and fish sauce so there's plenty of that in this recipe.

    Instructions

    Now let's get cooking!

    Prepare the opo squash. Use a vegetable peeler and peel off the skin. Cut it half lengthwise. Then cut into half-moon pieces, about ½ inch thick. Set aside.

    In a large pan over medium-high heat, add some oil and minced garlic. Cook for 2 minutes until lightly browned.

    Add the shrimp in a single layer. Cook for 1-2 minutes until it starts to take on some color...

    ...then flip and cook the other side for another 2 minutes.

    Add all the peeled and sliced squash. Gently mix.

    Stir fry for another 2-3 minutes until the squash softens and releases some of the juice.

    Season with the fish sauce. Cook for another minute. Give it a good mix, and you are done! Remove from heat. Plate and serve with a big bowl of rice! Enjoy right away ^_^

    FAQ

    What if you don't have opo squash?

    No worries, use zucchini!
    Note: you don't need to peel the skin if using zucchini.

    What if the squash releases too much juice during cooking?

    It's ok! You can cook it another minute longer so that a little more liquid can evaporate. Or you can serve as is (that's my preference)...the juice is SO good when poured over rice.

    What to eat this dish with?

    Rice! A big bowl of rice. You have the rice, the vegetable (squash), the protein (shrimp). It's a complete and wonderful meal ^_^
