Squash and Shrimp

A simple and saucy stir fry! Make this with just 4 ingredients and in 20 minutes. Shrimp and fresh opo squash (you can also use zucchini) is seasoned with garlic and fish sauce. Super tasty with a big bowl of rice ^_^

Ingredients

  • 1 large opo squash
  • 1 pound shrimp peeled and deveined
  • 1 head garlic minced
  • 2 teaspoons fish sauce

Instructions

  • Prepare the squash. Use a vegetable peeler and peel off the skin. Cut it half lengthwise. Then cut into half-moon pieces, about ½ inch thick. Set aside.
  • In a large pan over medium-high heat, add some oil and minced garlic. Cook for 2 minutes until lightly browned.
  • Add the shrimp in a single layer. Cook for 1-2 minutes until it starts to take on some color. Then flip and cook the other side for another 2 minutes.
  • Add all the squash and gently mix.
  • Stir fry for another 2-3 minutes until the squash softens and releases some juice.
  • Season with the fish sauce. Cook for another minute. Give it a good mix, and you are done! Remove from heat. Plate and serve with a big bowl of rice! Enjoy right away ^_^
