Prepare the squash. Use a vegetable peeler and peel off the skin. Cut it half lengthwise. Then cut into half-moon pieces, about ½ inch thick. Set aside.
In a large pan over medium-high heat, add some oil and minced garlic. Cook for 2 minutes until lightly browned.
Add the shrimp in a single layer. Cook for 1-2 minutes until it starts to take on some color. Then flip and cook the other side for another 2 minutes.
Add all the squash and gently mix.
Stir fry for another 2-3 minutes until the squash softens and releases some juice.
Season with the fish sauce. Cook for another minute. Give it a good mix, and you are done! Remove from heat. Plate and serve with a big bowl of rice! Enjoy right away ^_^
