Spam and Cabbage is a local favorite in Hawaii! This simple stir fry only needs a few ingredients and is super flexible. It's a happy dish, classic comfort food. We always eat this with a big bowl of rice ^_^

    Spam and Cabbage.

I made this Spam and Cabbage for a lunch and my mom was like wow, this combo is always so satisfying. Eat it with hot rice and there will be happy bellies all around.

We love cabbage, and one of the many ingredients that pair well is...Spam! We add onions for flavor, but skip it if you don't want/have. The only seasoning ingredient is soy sauce. But not too much because Spam is plenty flavorful.

    I like a ratio of: 1 can Spam : 1 head small cabbage : ½ onion.

Use any ratio that you like. If you like a lot of cabbage (mom's preference), you can double the cabbage but keep the same amount of Spam.

There's no right or wrong when it comes to this recipe, it's just what you like.

    Ingredients

Ingredients for making Spam and Cabbage.

    Here's what you'll need:

    • Spam - After growing up on "Spam Classic," I now use "Spam Lite" hahaha.
    • Cabbage - You can use any kind of cabbage. Green cabbage is most common for this recipe. I used savoy cabbage because it was on sale at the market. This recipe is also great with napa cabbage.
    • Onion
    • Soy Sauce

    Instructions

    Making Spam and Cabbage.

    Let's get cooking!

First, get all your ingredients ready:
    - Cut the Spam into bite-sized cubes.
    - Thinly slice the onion.
    - Slice the cabbage.

In a large pan over medium-high heat, add a little cooking oil followed by the onions and Spam. Cook for 3-5 minutes, until the onions start to brown.

Then add all the cabbage to the pan. Stir so that all cabbage evenly mixes with the Spam and onions. Then add a ½ cup of water followed by the soy sauce.

Keep cooking till the cabbage is tender, about another 5-10 minutes.

Then it is ready to eat! This is best with a big bowl of rice ^_^

    FAQ / Tips

    About the cabbage!

Green cabbage is the most popular cabbage for this dish, but you can use any cabbage you have available. I often make this with savoy cabbage and napa cabbage. (The photos in this recipe are with savoy cabbage.)

    Variations!

Have garlic available? Add a few cloves of minced garlic at the same time you add the onions.

Add 1 chopped tomato - stir it into dish 1-2 minutes before you are done cooking.

Scramble 2-3 eggs into the dish right before serving.

Add a spoonful of sesame oil to the dish.

Stir in lots of ground black pepper (in this spirit of this dish) right before you finish cooking. So good!

Memories! My mom made this regularly growing up. I never asked her how she makes it but I suspect it's very close to or identical to this. She never used onions, but I do now. Very occasionally I'll mince some garlic too, but not usually. I also really brown my spam but I know that's not typical. It causes the whole dish including the cabbage to turn brown, which isn't aesthetically pleasing but I think tastes good. Very much agree on the black pepper suggestion.

The scrambled egg and/or the sesame oil additions seem nice, will try. Thanks Kathy!
