We make Braised Mushrooms with plenty of garlic and green onions, and season with soy sauce and oyster sauce. It's saucy and deeply flavorful. Great with rice or a simple bowl of noodles!
I found some beautiful cremini mushrooms at Costco Hawaii and purchased the two pound box without a specific recipe in mind. What to do? Roast them? Toss them in a stir fry? Everything sounded ok but not exciting.
I planned to make garlic noodles and spring rolls for family dinner, so we wanted something tasty that would "match" those two dishes.
Something saucy, something juicy...something braised! Cue these braised mushrooms inspired by Woks of Life. It's straightforward and delicious using lots of garlic and pantry seasonings like oyster sauce, soy sauce, and sesame oil.
It all comes together in 30 minutes...pretty good for a braised dish ^_^
Ingredients
- Mushrooms - We used cremini mushrooms (which are also called baby bella mushrooms). You can use cremini or white mushrooms.
- Ginger
- Garlic
- Shaoxing wine - If you don't have shaoxing wine, use sake or chicken broth as a substitution.
- Chicken broth
- Oyster sauce
- Soy sauce
- Sesame oil
- White pepper
- Scallions
Instructions
Let's get cooking!
First prepare the mushrooms.
Wash and clean the mushrooms. Pat dry and cut them each in half.
Note: You don't have to worry about making them super dry (like we would if you were roasting the mushrooms. Just lightly patting them dry is fine.
Cook aromatics.
In a large saucepan over medium-high heat, add a little oil (we like to use avocado oil or vegetable oil) and saute the ginger and garlic until fragrant. This should take just about a minute.
Cook mushrooms.
Then add all the mushrooms to the pan.
Turn the heat to high and saute for a few minutes, until the mushrooms just start to brown. Then add the shaoxing wine (or you can use sake or chicken broth) and cook for another minute.
Season.
Now it's time to season the dish. Add the chicken broth, oyster sauce, soy sauce, and sesame oil. Stir to mix everything. Bring to a boil and then turn the heat down to medium.
Do a quick braise.
Cook for another 15 minutes. Stir every couple of minutes to make sure the mushrooms cook evenly. Keep cooking until most of the liquid is cooked down, but the dish is still pretty saucy.
Finish, eat, and enjoy!
Add half of the green onions. Mix and cook for another minute. Then plate and top with the other half of the green onions. Eat and enjoy!
Top Tip
Sometimes we end up with too much liquid in the pan, even if we braise it for more than 15 minutes. If this happens, you can turn the heat up to high heat for and most of the braising liquid should boil down in a few minutes.
Make sure to stay by the stove and keep a close eye in case the liquid boils down too quickly.
Another other option is to use a ladle and scoop out the extra braising liquid. You can save the braising liquid for another dish, I like using it to make braised tofu!

For enoki mushrooms, make bacon-wrapped enoki mushrooms.
For shiitake mushrooms make, shiitake mushroom pasta. We also use shiitake mushrooms in recipes for yakisoba, buddha's delight (lo han jai), and yi mein (longevity noodles), and ozoni (Japanese mochi soup).
Do you have wood ear mushrooms? Make wood ear mushroom salad or wood ear mushroom stir fry. We also love making cha trung (Vietnamese egg meatloaf) and pork and tofu casserole (Taiwan mushi).
I think of braised mushrooms as a vegetable side dish. For a complete dinner, I would also need a starch (either rice or a simple noodle dish). And then add a main dish like this for fish or this for a chicken dish.
You can keep leftovers in the refrigerator for 2-3 days. Reheat in microwave in 30 second increments. You can also reheat in a small pan over the stove on medium heat.
Yes! Replace the chicken broth with mushroom broth or vegetable broth. Replace the oyster sauce with a vegetarian or vegan oyster sauce.
