Bacon wrapped enoki mushrooms is fun and easy to make. It's also quite popular at local yakitori restaurants! We love serving it as part of a larger meal. Or for a quick lunch, we enjoy it as the main dish (with a big bowl of rice). We usually serve it with plain white or brown rice, but for special occasions I make Ume Shiso Rice to go with it.
To make this mushroom with bacon dish, all you need to do is cut strips of bacon in half and wrap it around little bundles of enoki mushrooms. Then pan fry, drizzle a mixture of soy sauce and mirin on top. Then serve and eat! It really is that easy.
The bacon gets super crisp, the mushrooms are juicy and soak up the bacon flavor (and fat), along with that classic soy sauce and mirin mixture. Super onolicious.
Ingredients
Here's what you'll need:
- Enoki mushrooms - This can be purchased at most Japanese supermarkets. The mushrooms usually come in a plastic package as one bundle (depending how big the bundle is, you might need 1 or 2 packages). Gently break apart the bundles into mini bundles for this recipe.
- Bacon
- Soy sauce
- Mirin

Step by Step Directions
Here are the directions with photos:
First make sure to trim off the bottom ends of the enoki mushrooms. I usually cut off 1-inch of the bottom of the mushrooms. Then gently clean the mushrooms.
Carefully divide the enoki mushrooms into 10 smaller bundles and set aside.
Cut the 5 bacon strips in half so that you have 10 total bacon strips.
Wrap each enoki mushroom bundle with a half strip of bacon. Each strip should be able to wrap around the mushrooms about two times.
Keep repeating the wrapping process till you complete all 10 pieces.
Place the wrapped bundles in a large pan. Try leave a little bit of space between each piece so that they aren't touch.
Make sure the bacon is seam side down (otherwise it might unravel when cooking).
Cook over medium heat until the bottom is crisp and browned (about 4-5 minutes).
Gently flip and cook the other side till it's also crisp and browned.
Note: You might need to flip another 1 or 2 times to make sure it's browned all over. We like the bacon crispy!
Mix the soy sauce and mirin together in a small bowl. Once the bacon is ready turn the heat to low and drizzle the mixture over the bacon and mushrooms.
Use chopsticks or tongs to gently move the bundles around so that they soak up the sauce. Cook for 1 more minute.
Turn off the heat, and remove the bundles to a plate.
Sprinkle with sesame seeds (optional but it is pretty and tasty) and serve hot! We love this with a big bowl of rice ^_^
