    Okra And Eggs

    Simple and delicious Okra and Eggs stir fry! All you need is 15 minutes and 4 ingredients. Great for an easy meal or side dish. Crisp okra and soft scrambled eggs is a super combination.

    Okra is one of my favorite vegetables and I'm always looking for different (but simple) ways to prepare it.

    This stir fry is one of my go-to recipes. It's just okra and scrambled eggs, seasoned with soy sauce and sesame. Plus a little salt.

    It's nourishing and flavor packed. Okra and eggs always makes me feel good and happy to eat!

    Ingredients for Okra and Eggs.

    Ingredients

    Here's what you'll need:

    • Okra
    • Eggs
    • Soy sauce
    • Sesame oil
    Okra.

    Instructions

    Let's get cooking!

    Wash and clean the okra. Trim off the ends. Slice the okra at an angle to get 1-inch long pieces. Set aside.

    In a small bowl, beat the two eggs and add a pinch of salt to season. Set aside.

    Stir fry okra.

    In a large pan over high heat, add some oil. Then add all the okra.

    Stir fry for 2-3 minutes until the okra is golden brown and crisp.

    Note: I like to add a little more oil than I usually do, so that the okra can get a really nice brown / char.

    Season the okra with soy sauce and a pinch of salt.

    Push the okra to one side of the pan.

    Pour in the eggs and turn the heat to medium. Scramble the eggs until they are just set.

    Note: Try your best to keep the uncooked eggs from mixing too much into the okra. A little is ok, but we want to keep it separate until the eggs are fully scrambled.

    Once the eggs are set, gently fold and mix the eggs with the okra.

    Turn off the heat and add the sesame oil. Give everything one more mix. It's ready to eat!

    Top Tip

    Keep in mind that this is a super flexible recipe. If you like more okra, use more okra! If you want more eggs, use more eggs.

    There's no right or wrong, think of this recipe more as a general guide / idea to combine okra with scrambled eggs ^_^

    How long does this dish keep?

    I usually just prepare enough for a single serve, but leftovers will keep the refrigerator 1-2 days. Reheat in the microwave in 15 second increments. You can also reheat on the stove, just add a little oil to a pan and reheat on medium heat for a few minutes.

    Substitutions and variations?

    Here are a few ideas that we often do:
    - Top the dish with chopped Thai or Hawaiian chili peppers.
    - For a different type of heat, season the eggs with white pepper before scrambling (add white pepper the same time you add the salt to the eggs).
    - Season with fish sauce (nuoc mam) instead of soy sauce and sesame oil.
    - Mince a little garlic and ginger. Saute both for a minute before adding the sliced okra to the pan.

    • 8 pieces okra about half pound
    • 2 eggs
    • 1-2 teaspoons soy sauce
    • 1 teaspoon sesame oil

    • Wash and clean the okra. Trim off the ends. Slice the okra at an angle to get 1-inch long pieces. Set aside.
    • In a small bowl, beat the two eggs and add a pinch of salt. Set aside
    • In a large pan over high heat, add some oil. Then add all the okra. Stir fry for 2-3 minutes until the okra is golden brown and crisp.
    • Season the okra with soy sauce and a pinch of salt.
    • Push the okra to one side of the pan. Pour in the eggs and turn the heat to medium. Scramble the eggs until just set (try to keep the eggs from mixing into the okra).
    • Once the eggs are set, gently fold/mix the eggs and okra.
    • Turn off the heat and add the sesame oil. Give everything once more mix. It's ready to eat!
