Wash and clean the okra. Trim off the ends. Slice the okra at an angle to get 1-inch long pieces. Set aside.
In a small bowl, beat the two eggs and add a pinch of salt. Set aside
In a large pan over high heat, add some oil. Then add all the okra. Stir fry for 2-3 minutes until the okra is golden brown and crisp.
Season the okra with soy sauce and a pinch of salt.
Push the okra to one side of the pan. Pour in the eggs and turn the heat to medium. Scramble the eggs until just set (try to keep the eggs from mixing into the okra).
Once the eggs are set, gently fold/mix the eggs and okra.
Turn off the heat and add the sesame oil. Give everything once more mix. It's ready to eat!
