Ginger Chicken is a simple stir fry dish that often ends up on our weeknight dinner rotation. Everyone loves it!
We start with marinating chicken in a soy sauce and oyster sauce mixture. Then we saute red onions and green onions. Add the marinated chicken to the pan and stir fry it. Finally, stir in the green parts of the green onions. Time to eat! Very straightforward.
It's a cozy, home cooking type of dish. Not fussy or fancy, just delicious.

Here's what you'll need:
- Boneless skinless chicken thighs
- Shaoxing wine
- Soy sauce
- Oyster sauce
- White pepper
- Ginger
- Red onion (or shallots)
- Green onions

Instructions
Now let's get cooking:
Prepare the chicken.
Cut the boneless skinless chicken thighs into small pieces. This comes out to about 6-8 pieces per thigh.
Marinate the chicken.
Place the cut chicken in a large bowl and add the Shaoxing wine, soy sauce, oyster sauce, and white pepper.
Mix so that the chicken is evenly coated with the sauce. Set aside and marinate for 15 minutes.
Saute the aromatics.
In a large pan over medium-high heat, add some oil and then the ginger, red onion (or shallots), and white part of the sliced green onions.
Saute for 3-4 minutes until fragrant.
Add the chicken and stir fry.
Then add the chicken and stir fry for few more minutes until the chicken is fully cooked through.
Serve and enjoy ^_^
Mix in the green part of the green scallions. Stir to combine. Serve and eat and enjoy!
Substitutions and Variations
Ginger chicken is a flexible dish. These are popular substitutions and variations:
- Garlic - do you love garlic? You can add it to this recipe. Mince the garlic and add it at the same time you add the red onions.
- Bone-in chicken - feel free to use drumsticks or chicken thighs with the bone-in.
- Tofu - this recipe also works with deep fried tofu cubes. We like to buy deep fried tofu from Aloha Tofu Factory, but you can also make deep fried tofu at home. It's an extra step (and I know deep frying is a hassle), but it's worth it.
- Mushrooms - the dish is great with the addition of mushrooms. From oyster mushrooms to wood ear mushrooms and shiitake mushrooms, you pick!

Storage
Ginger chicken leftovers keep for 2-3 days. Store in a sealed container. Reheat in the microwave in 30 second increments. And don't forget the rice!
Top Tip
Make sure to marinate the chicken for at least 15 minutes. You can marinate longer (up to an hour), but don't skip this step. Marinating infuses all the chicken with all the good flavors from the soy sauce, oyster sauce, Shaoxing wine, and white pepper. This also helps form the "sauce" of the recipe.

We haven't found a good substitute for Shaoxing wine. We use it in many recipes and it will keep for a long time in the refrigerator. I recommend visiting a Chinese market and picking up a bottle. It's available online but more expensive. Go to a shop if you can.
This recipe will still be delicious without it, so don't let that hold you back. If anything you can skip the Shaoxing wine (for this recipe, skipping is better than using a substitute ingredient).
Because this dish is super flavorful, it goes best with rice and a simple vegetable and/or tofu dish.
