Ingredients

  • 1 pound boneless skinless chicken thighs
  • 2 tablespoons Shaoxing wine
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoons white pepper
  • 1 3-inch knob ginger, julienned
  • 1 medium red onion (or 3 shallots), sliced
  • 3 stalks green onions, chopped, whites and greens separated

Instructions

  • Cut the boneless skinless chicken thighs into small pieces (about 6-8 pieces per thigh).
  • Place the chicken a large bowl and add the Shaoxing wine, soy sauce, oyster sauce, and white pepper.
  • Mix so that the chicken is evenly coated with the sauce. Set aside and marinate for 15 minutes.
  • Add oil to a large pan over medium-high heat. Then add the ginger, red onion (or shallots), and white part of the sliced green onions. Saute for 3-4 minutes until fragrant.
  • Add the chicken and stir fry for another few minutes until the chicken is fully cooked through.
  • Mix in the green part of the green scallions. Stir to combine. Serve and eat and enjoy!
