A super delicious and satisfying snack. I love making Crispy Cheese Tacos because you only need two ingredients and five minutes. Warm tortillas, and melted crispy cheese...so good! Also great for a quick breakfast ^_^

This is less of a recipe and more of a concept.
It's super easy and all you need are two ingredients: cheese and tortilla.
I usually crispy cheese tacos as a snack...for myself only heheh. It's one of those great solo dishes that you eat standing next to the stove (because you need to eat this right when it's done cooking!) These tacos are immensely satisfying and will put you in a good mood.
Tortillas
You can use corn or flour tortillas. There is a great local tortilla company here on Oahu called Raiz Tortillas. I used their blue corn tortillas for this post (bought from the Saturday Kakaako Farmers Market).
I also like making this with flour tortillas. If you have option between tortilla sizes, get smaller size tortillas. Aim for taco-size, not quesadilla-size.
Ingredients
Here's what you'll need. Only two ingredients:
- Tortilla - One per serving. I usually make 1 for a snack and 2 for breakfast.
- Shredded Cheese - Use any type of shredded cheese. Sometimes I use cheddar. Sometimes I use a blend (you can find a "pizza blend" or "Mexican-style blend." Both those work perfect for this snack.
Method
Now let's get cooking!
In a small pan over medium-low heat, sprinkle the grated cheese in the pan. Sprinkle the cheese to make a filled circle shape, and aim to make it a little bigger than the diameter of the tortilla.
Let the cheese melt for a couple of minutes.
When the cheese is melted and starts to look a little crispy looking, place the tortilla on top of the cheese. Let sit for a minute.
During this minute, the cheese will stick to the tortilla. This also give the tortilla some time to warm up and get nice and soft.
Then use a spatula to flip it over (it should flip easily and no cheese should stick to the pan). Let the tortilla warm up on the other side for 30 seconds.
Then remove onto a plate.
Fold it in half and eat right away! Enjoy ^_^
FAQ
They do not keep. Making them only when you are ready to eat them. I eat them within a minute of taking it off the stove (which is why this makes a great solo snack).
You can make Kimchi Cheese Udon! Or try Naan Pizza or Natto Toast with cheese and cabbage ^_^
Yes! I like to drizzle chili crisp over the cheese right before folding the taco in half. We always keep a mix of chili crisp at home, right now we have jars from Fly By Jing, Milu, and one from The Mala Market. They all taste different so I switch it up depending on my mood.
If I want a more filling breakfast, I quickly scramble an egg right after making the taco and then tuck the scrambled egg into the taco and add chili crisp. If there's avocado, I'll also add a slice of that. And sometimes I add some shredded cheese into the scrambled egg so it gets all melty.
