    Crab Toast

    A simple and satisfying Crab Toast always hits the spot! We just mix fresh crab meat with Kewpie mayonnaise, spread on good bread and toast! Finish with salt, pepper, and chives. Elegant, easy, and very delicious.

    Fresh crab meat, mixed with good mayo. Spread on bread and toasted until golden. What else could this be except for super onolicious ^_^

    We like to make quick and easy toasts for breakfast, snacks, mini lunch. From Mentaiko Toast to Natto Toast with Cheese and Cabbage, Natto Egg Toast and even Black Sesame Toast...the world of toast is limitless!

    Ingredients

    Here's what you'll need:

    Ingredients for making crab toast.
    • Crab meat - We often steam several crabs at once and pick and freeze the crab meat. We use crab meat for many dishes including this tasty crab toast. Many markets also sell picked crab meat, so you can also buy it already picked as well.
    • Kewpie mayonnaise - Make sure to use Kewpie mayonnaise! You can use regular mayonnaise in a pinch but it won't be as good. Why? Kewpie uses only egg yolks which makes it richer, creamier, and sweeter. So much more tasty.
    • Bread - Ideally Japanese milk bread (Shokupan) or brioche.
    • Salt and pepper - Since this recipe has very few ingredients, the quality of each ingredient makes a difference. Plus we want to also do the crab meat justice! We add the salt and pepper at the very end, so you can really taste these ingredients. We like Maldon salt (a great finishing salt) and fresh ground black pepper.
    • Chopped chives - Optional but a good idea!

    Instructions

    Let's get cooking:

    Make the mixture.
    Mix the crab meat and Kewpie mayonnaise together in a small bowl.

    Spread and toast.
    Spread the mixture on a slice of fresh bread. Try to spread it all the way to the sides/ends, so that all of the bread slice is covered with the crab mixture.

    Toast in the toaster oven at 400F for 4-5 minutes.

    Add toppings and enjoy.
    Top with a sprinkle of salt and pepper, and the chopped chives. The chives are optional but a very good idea. Eat hot and enjoy.

    Substitutions and Variations

    Here are some tasty ideas:

    • Spicy - Sprinkle shichimi togarashi on top for heat. This is a popular brand. Or try this tasty version.
    • Different bread - We like this recipe best with Japanese milk bread (also called shokupan) or brioche, but you can try it with any type of bread you like. Sometimes we use challah or nice rustic loaf. In Honolulu we like to buy Japanese milk bread from Epi-Ya, Brug, and Okayama Kobo Bakery. We like brioche from Breadshop in Kaimuki.
    • Green onions - Mix thinly sliced green onions into the crab and Kewpie mayonnaise. So good!
    • Red or green bell pepper - Add a tablespoon of diced red or green bell peppers to the crab mixture.

    Equipment

    All you need is a toaster oven! If you don't have a toaster oven, you can also cook the crab toast in a regular oven. But a toaster oven is a lot easier (especially if you're just making one piece).

    We have had everything from a fancy toaster oven to a simple $30 one...and you know what? They all get the job done. So just get the one that works for you.

    Storage

    You can assemble the crab and Kewpie mayonnaise a few hours in advance (keep it in a sealed container in the refrigerator)

    But once you make the toast, please eat it right away...ideally within a few minutes of taking it it out over the toaster oven!

    Top Tip

    Keep crab meat ready to go in the freezer!

    We love eating crab at home. My mom often buys fresh crab for dinner. We bring it home, steam the crab and eat it hot. Dip the crab meat in our homemade Lemon Pepper Sauce and wowowow.

    When there's a good price on crab, we buy several crabs and steam them all. Then we let it cool, pick the crab meat, and freeze it. Frozen crab meat is always good to have on hand, especially if you know it came from good crab that that you picked yourself.

    It's a lot of work (and also messy), so picking several crabs in single sitting and freezing the crab meat for your future self is a good idea ^_^

    What to do with the extra chives?

    Use it to make Mentaiko Rice!

    Doubling the recipe.

    Follow this ratio of ¼ cup crab meat, 1 tablespoon Kewpie mayonnaise, and 1 slice of bread per person and you can easily double, triple, or even quadruple the recipe. If you're making several pieces at once, then you might want to use a regular oven (so that you can fit more pieces in). But other than that, it's toaster oven all the way for us ^_^
