Ingredients

  • 2 eggs
  • 1 package natto about 50 grams
  • 1 teaspoon soy sauce
  • 1 stalk green onion chopped

Instructions

  • Prepare the natto. Open the package of natto. Remove the seasoning packets (there are usually two - one is soy sauce-based and another is hot mustard).
Slide the plastic layer/cover off the natto and discard.
Open the seasoning packet(s) and add it to the natto.
Use chopsticks to mix/whip the natto with the seasonings. Mix it really well until the natto looks almost airy and frothy. Aim for at least 100 mixes! Even better if you can do more.
Note: If your natto comes with comes with seasoning packets, you can skip the soy sauce mentioned in the ingredient list above. If your natto does not come with seasoning packets, then add a teaspoon of soy sauce to the natto before you mix/whip it. You can also add hot mustard if you want but that's optional.
  • In a small bowl, beat the eggs and add a pinch of salt.
  • In a medium pan over medium heat, add some oil. Once the pan is warmed, pour in the eggs. Gently swirl the pan to distribute the eggs evenly.
Once the eggs start to set, use a spatula to carefully push the cooked parts of the egg inwards, so that any uncooked eggs pour over to the edges and cook.
  • Then use a spoon to add the natto to one half of the omelette. Top with half of the green onions.
Fold the other half of the eggs over the natto and green onions.
  • Let cook for another 30 seconds to set. Remove from heat. It's ready to eat!
