Sardine Salad

Bright and flavorful, this sardine salad includes capers, parsley and green onions. Easy to make. Enjoy with crackers on in a sandwich!

Ingredients

  • 2 tins sardines, packed in oil
  • 2 stalks green onions, chopped
  • 1 tablespoon garlic minced
  • 1 tablespoon capers
  • ¼ cup parsley, chopped
  • 1 tablespoon olive oil
  • 1 whole lemon, juiced

Instructions

  • Place all the ingredients together in a mixing bowl.
  • Use two forks to mash, stir, and mix everything together. Leave it more chunky/rough textured if you prefer. Or mix more to get it smoother.
  • It's ready to eat! Serve the sardine salad with crackers (it makes a great party appetizer). Or use it to make a sandwich.
